– 1 medium spaghetti squash – 2 tablespoons olive oil – Salt and pepper to taste – 2 cloves garlic, minced

– 1/2 cup diced onion – 1/2 cup diced bell pepper (any color) – 1/2 cup diced mushrooms (optional) – 1 cup marinara sauce

– 1/2 cup shredded mozzarella cheese – 2 tablespoons grated Parmesan cheese – Fresh basil or parsley, chopped (for garnish)
